Made With Care
We select fruit from vineyards throughout Marlborough's famed Wairau and Awatere Valleys. This gives us the ability to consistently blend our famous Giesen style Sauvignon Blanc year in, year out.
The Wairau Valley is known for producing fruit that adds brightness, tropical and citrus notes, and a lovely tighter acidity to our final product.
The Awatere Valley - slightly cooler, drier, and windier - gives us fruit which adds fullness, richness, and interesting flavours. Here we find the tropical notes are more grilled, and the herbal notes more dry.
Our winemakers aim to emphasise these vineyards and amplify our wonderful fruit. Following a gentle pressing, we started with carefully selected yeasts added to the juice to start fermentation. These yeasts were chosen to help build texture, weight and aromatics. Parcels of fruit were batch fermented with fermentation stopped when the perfect balance of natural sweetness and classic Marlborough acidity was achieved.
